Anyone who knows me well knows that I am crazy about salads.

One of my favorite salads has always been the Cobb Salad at the Brown Derby in Orlando.

While most of it is keto-friendly, I am relatively sure that the dressing has sugar in it.

This Keto Chicken Cobb Salad tips its hat to the traditional while staying sugar-free, low-carb, and keto-friendly.

This isn't your typical side salad, but rather a meal all its own. I'll have to say that as far as salads go, this dish is a tad indulgent. But no worries - this nutrient-rich meal has just four net carbs a serving.

Low Carb Cobb Salad Ingredients

  • Vinegar:I used red wine vinegar, but unseasoned rice wine vinegar or apple cider vinegar works as well.
  • Lemon Juice:Freshly squeezed lemon juice is best. For an extra pop of lemon flavor, you can also add in the zest.
  • Dijon Mustard:If you prefer, grainy brown mustard may be used.
  • Garlic:Fresh minced garlic is best, but garlic powder may also be used.
  • Sweetener:I used Swerve confectioners. Taste the dressing and adjust the sweetness to your liking.
  • Crushed Red Pepper Flakes:This adds a subtle heat. Omit if you do not care for heat.
  • Salt and Pepper:I used ½ teaspoon salt and ¼ teaspoon of black pepper. Adjust to your personal preference.
  • Olive Oil:A good quality extra-virgin olive oil is excellent here.
  • Romaine:You can save time by buying pre-washed and chopped.
  • Grilled Chicken:You can pick up a chicken at the grocery store or use thisKeto Grilled Chickenrecipe. (Thisair fryer chickenis good too.) I like chicken breasts, but thighs will work too.

  • Tomatoes:I used plum, but any type you like works here. Cherry tomatoes are a great option.
  • Blue Cheese:I find that buying a block and crumbling it myself yields the best flavor, but pre-crumbled works if you are short on time.

The Cobb Salad was created by Robber Cobb at the Brown Derby Restaurant in Los Angeles. The legend goes that Cobb, the owner of the restaurant, went into the kitchen late one night and tossed together a salad with what was on hand at the cold station.

He shared this with a patron, and the next day he came back asking for more. It was such a hit that it became a regular on the menu. Today the salad appears on menus everywhere and is commonly served with rows of ingredients laid out.

What is In a Cobb Salad?

Although there are numerous variations, the classic Cobb is a chopped salad made up of lettuce, chicken, bacon, hard-boiled eggs, avocado, Roquefort or blue cheese, tomatoes, and a red wine vinaigrette.

Ingredients

Dressing

  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon Swerve
  • ½ teaspoon crushed red pepper flakes

  • 1 head romaine lettuce torn or shredded
  • 16 ounces chicken grilled
  • 8 ounces bacon cooked and chopped
  • 3 large Hard-Boiled Eggs
  • 1 avocado peeled, pitted and diced
  • 2 plum tomatoes diced
  • cup blue cheese crumbled

Instructions

  • Make the dressing by combining vinegar, lemon juice, dijon mustard, garlic, crushed red pepper flakes, sweetener of choice, salt, and pepper in a blender, food processor, or jar. Mix until combined. Add in oil, and shake or blend until emulsified.

    Yes, Sugar is in all bacon except for bacon is labeled no sugar.
